A hands-on course designed to help people build confidence in the kitchen, learn practical cookery skills, and develop a strong foundation for progressing into catering and hospitality.
Flavour sits at the centre of everything we do. We believe healthy food should never be boring, and that good flavour inspires a lasting enjoyment of cooking. By exploring a range of ingredients, techniques, and cuisines, students learn how to create dishes that are both nutritious and full of character.
Oscar Neumann, Kitchen 23 tutor
The course is focused on student-led learning. What do you want to make? Our sessions encourage students to explore the dishes and flavours that matter most to them. This helps make learning more engaging while building creativity, curiosity, confidence, and ownership over each student’s culinary journey.
At the heart of our approach is a commitment to treating everyone with dignity and respect. We believe a positive and inclusive environment is essential for learning, where every individual feels valued, supported, and encouraged to grow. Regardless of background, experience, or ability, every student is given the opportunity to develop confidence, learn practical skills, and thrive.
Throughout the course, students learn a range of core techniques including bread making, pasta, sauces such as béchamel, food preparation, kitchen organisation, and teamwork. Sessions are practical, engaging, and designed to build confidence through experience. We aim to create an environment where students feel comfortable trying new things, developing independence, and learning from each other.
Through hands-on learning, students build a strong foundation of practical cookery skills and kitchen knowledge that can support progression into further training, employment, or continued personal development.
Our approach to the course is simple. Everyone is treated with dignity and respect:
- We aim to improve food health and wellbeing for everyone, regardless of age or ability.
- Flavour is king. Whatever we make, we strive to make it as delicious as possible.
- Student voices matter. Our learner-led sessions explore the dishes and flavours that are important to you.
